this is what i was told:

I cut the hide into strips while its wet as its easy to cut then it also makes it easy to handle as a full wet hide is very heavy.I just used table salt, cover the hide with it and roll it up and set it on end so any fluid will drain off, check it once a week or so and re-salt as needed, you can also set it outside when the sun is shinning and just leave it un-rolled but salted and it will cure very fast.If the humidity is high the hide will re-hydrate a little,I just keep them salted until I'm ready to use them. The salt will kill about anything that could be on the hide.If there is a lot of fat chunks on your hide you might want to shave them off first as they take a long time to dry out but a few are no big deal.
